How To Use A Burger Press
On the surface, a burger press might not seem like a difficult contraption, but there are some tips that can make your barbecue life much easier. I’ve managed burger restaurants for the better part of my life, and have a close relationship with burger presses (creepy, huh?). Throughout the years I’ve figured some ways that make them work a ton better, that I want to share with you in this post.
The basic way to use a burger press is to break up your beef into equal portions, use a scale for best results. Once you have everything portioned out, roll them into tight balls. To get the beef to stick together best, use the meat ball trick of tossing the ball from one hand to the other, letting it slap against your hand. This gets everything packed in tight, and burgers that are less likely to fall apart once they get pressed. From there, put the beef in with patty paper underneath and press.
Using patty paper is crucial because as soon as it comes out of the press you can stack it on top of the last one that you made, which keeps things neat, clean, and organized. If you don’t have patty paper on hand, cut squares of parchment paper.
Once your patties are pressed, stick them back in the fridge for a while. This will get them back to a “safe” temperature and help the patties stick together better in their new shape.
To put them on the grill, grab the patty with the paper and flip it over onto the grill. This allows you to you pull the patty paper away from the burger, which gives your fingers minimal contact to raw meat and leaves a smooth surface.
